  • 1 cup bell pepper (any color), diced

  • 1 cup cherry tomatoes, halved

Instructions

  1. Wash and chop the cauliflower into bite-sized florets.
  2. Blanch the cauliflower in boiling water for 3 minutes; then drain and cool under cold running water.
  3. In a large bowl, combine blanched cauliflower, bell pepper, red onion, cherry tomatoes, and cilantro.
  4. In a small bowl, whisk together lemon juice and olive oil; season with salt and pepper.
  5. Drizzle the dressing over the salad mixture and gently toss until coated. Let sit for 10 minutes before serving.
