  • 1 cup fine bulgur wheat
  • 1 ½ cups boiling water
  • 1 cup fresh flat-leaf parsley, finely chopped
  • ½ cup fresh mint leaves, finely chopped
  • 1 cup ripe tomatoes, diced
  • ¼ cup freshly squeezed lemon juice
  • ¼ cup extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Rinse bulgur wheat under cold water and soak in boiling water for 15 minutes until fluffy.
  2. Finely chop parsley, mint, and tomatoes while bulgur cools.
  3. In a large bowl, combine bulgur (drain excess water), parsley, mint, and tomatoes. Toss gently.
  4. Drizzle with lemon juice and olive oil; season with salt and pepper. Mix well.
  5. Chill in the refrigerator for at least 30 minutes before serving for enhanced flavor.
