  • 2 lbs chicken thighs
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 2 tsp fresh thyme or 1 tsp dried thyme
  • ¼ cup low-sodium soy sauce
  • 2 tbsp brown sugar
  • 1 tsp pimento (allspice)
  • 2 carrots, sliced
  • 1 Scotch bonnet pepper (optional)
  • 2 cups chicken broth or water

Instructions

  1. Rinse and pat dry the chicken thighs. In a bowl, mix with garlic, thyme, soy sauce, brown sugar, pimento, and salt. Marinate for at least 30 minutes.
  2. Heat oil in a large pot over medium heat. Sauté onions until translucent. Add bell peppers and carrots; cook until slightly softened.
  3. Add marinated chicken to the pot and brown each side for about 5 minutes.
  4. Pour in chicken broth or water; bring to a simmer. Cook for approximately 45 minutes until tender.
  5. Check seasoning before serving; pair with rice or bread.
