  • 3 lbs boneless pork shoulder
  • 2 medium sweet onions, chopped
  • 6 garlic cloves, minced
  • 2 tsp ground cumin
  • 2 tsp chili powder
  • 1 cup fresh orange juice
  • 1/4 cup fresh lime juice
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Trim excess fat from the pork shoulder and cut into large chunks.
  2. In a skillet, sauté onions until translucent (about 5 minutes). Add garlic, cumin, and chili powder; stir until fragrant.
  3. Transfer the onion mixture to the crockpot. Layer with pork chunks and pour orange and lime juice over everything. Add bay leaves.
