Ingredients

  • 1 lb ground chicken
  • 1/2 cup plain breadcrumbs
  • 3 cloves garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp fish sauce
  • 1 tbsp red curry paste
  • 1 egg
  • Juice of 1 lime
  • 2 tbsp low-sodium soy sauce
  • 1 tsp Sriracha (optional)

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, breadcrumbs, garlic, cilantro, fish sauce, red curry paste, egg, lime juice, and soy sauce. Mix until just combined.
  3. Form mixture into 1-inch meatballs and place on the prepared baking sheet.
  4. Bake for 20-25 minutes until golden brown and cooked through.
  5. Optional: Whisk together soy sauce and Sriracha for dipping while meatballs bake.
  6. Serve with steamed rice or zoodles and drizzle with dipping sauce.
