- 2 medium Yukon Gold or red potatoes (about 1 lb), diced
- 1 cup bell peppers (red or yellow), chopped
- 1 medium yellow onion, chopped
- 3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 2 tsp olive oil
- 1 tsp paprika
- 1 tsp dried thyme
- Salt and pepper to taste

Instructions
