  • 1 cup coarse polenta
  • 2 cups water or vegetable broth
  • 4 ripe tomatoes, halved
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh thyme, chopped
  • 1/2 cup grated Parmesan cheese, plus more for topping
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Chop the tomatoes and mince the garlic.
  2. On a baking sheet, combine halved tomatoes with olive oil, salt, pepper, and minced garlic. Roast for about 20 minutes until soft.
  3. In a saucepan, bring water or broth to a boil. Gradually whisk in polenta, stirring constantly for about 5 minutes until thickened.
  4. Stir in chopped herbs and half of the Parmesan into the cooked polenta.
  5. In a greased baking dish, layer half of the polenta mixture, followed by roasted tomatoes, then top with remaining polenta and sprinkle with more cheese.
  6. Bake for 25 minutes or until golden brown.
