  • 2 cups carrots, chopped
  • 2 cups Yukon Gold potatoes, quartered
  • 1 large sweet onion, thinly sliced
  • 4 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp fresh thyme leaves
  • 3 tbsp fresh parsley, chopped (plus extra for garnish)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté sliced onions until translucent (about 3-4 minutes).
  2. Add minced garlic and sauté for another minute.
  3. Season chicken breasts with salt and pepper, then add them to the pot. Brown on both sides (about 5 minutes).
  4. Mix in carrots and potatoes. Pour in chicken broth until ingredients are just covered.
  5. Sprinkle thyme over the mixture, cover pot, and bring to a gentle boil. Reduce heat to low and simmer for 25-30 minutes until tender.
