  • 1 lb flank or skirt steak
  • 2 cups mixed bell peppers (red, yellow, green), sliced
  • 1 medium sweet onion (Vidalia), sliced
  • 2 cups cooked brown rice or greens
  • 2 tsp fajita seasoning (store-bought or homemade)
  • Juice of 1 lime
  • ¼ cup fresh cilantro, chopped
  • 1 avocado, sliced or mashed
  • ½ cup sour cream or Greek yogurt
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder

Instructions

  1. Slice the steak against the grain into thin strips.
  2. In a bowl, marinate the steak with olive oil, lime juice, garlic powder, cumin, and chili powder for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Add onions and bell peppers; sauté until soft and slightly charred (5-7 minutes).
  4. Push veggies aside and add marinated steak strips to the skillet. Sear until browned on both sides (about 3-4 minutes each).
  5. Prepare rice according to package instructions or arrange greens in bowls.
  6. Assemble by layering rice or greens in bowls topped with sautéed veggies and steak. Finish with avocado slices, cilantro, and sour cream.
