- 2 lbs oxtails
- 1 large yellow onion, chopped
- 4 cloves garlic, minced
- 3 large carrots, cut into chunks
- 2 stalks celery, chopped
- 4 cups beef broth (low-sodium)
- 1 cup dry red wine
- 2 bay leaves
- 1 tsp fresh thyme (or ½ tsp dried thyme)
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- Heat olive oil in a large pot over medium-high heat. Sear oxtails until browned on all sides (about 4-5 minutes per side). Remove from pot.
- In the same pot, sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
- Pour in red wine to deglaze the pot; scrape up brown bits and let it reduce slightly.
- Add beef broth, bay leaves, thyme, salt, and pepper; return oxtails to the pot.
- Bring to a boil, then cover and simmer on low heat for 2-3 hours until meat is tender.
- Adjust seasoning as needed before serving; remove bay leaves.
