Description

Oxtail Stew is a heartwarming dish that combines tender, slow-cooked oxtails with rich, savory broth and aromatic spices. This comforting meal is perfect for cozy gatherings, filling both the belly and the soul.


Ingredients

  • 2 lbs oxtails
  • 1 large yellow onion, chopped
  • 4 cloves garlic, minced
  • 3 large carrots, cut into chunks
  • 2 stalks celery, chopped
  • 4 cups beef broth (low-sodium)
  • 1 cup dry red wine
  • 2 bay leaves
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear oxtails until browned on all sides (about 4-5 minutes per side). Remove from pot.
  2. In the same pot, sauté onions, garlic, carrots, and celery until softened (about 5 minutes).
  3. Pour in red wine to deglaze the pot; scrape up brown bits and let it reduce slightly.
  4. Add beef broth, bay leaves, thyme, salt, and pepper; return oxtails to the pot.
  5. Bring to a boil, then cover and simmer on low heat for 2-3 hours until meat is tender.
  6. Adjust seasoning as needed before serving; remove bay leaves.
