Ingredients

  • 8 oz tortilla chips
  • 1 cup fresh tomatoes, diced
  • 1 cup cucumbers, diced
  • ½ cup red onion, thinly sliced
  • 1 cup feta cheese, crumbled
  • 2 tbsp extra virgin olive oil
  • 1 tsp dried oregano
  • 2 tbsp lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Wash and dice the tomatoes and cucumbers into small pieces.
  3. Thinly slice the red onion; soak in cold water for 5 minutes if desired.
  4. On a large serving platter, layer the tortilla chips slightly overlapping.
  5. Evenly distribute the diced tomatoes, cucumbers, and onions over the chips.
  6. Sprinkle crumbled feta cheese on top.
  7. Drizzle with olive oil and lemon juice, then finish with oregano.
  8. Bake in the oven for about 10 minutes until warm and enjoy!
