  • 2 lbs chuck roast, cut into 1-inch pieces
  • 4 medium carrots, chopped
  • 4 Yukon Gold potatoes, peeled and diced
  • 2 medium yellow onions, chopped
  • 4 cloves garlic, minced
  • 4 cups beef broth (low-sodium preferred)
  • 2 tsp olive oil
  • 1 cup red wine (optional)
  • 1 tsp salt (to taste)
  • ½ tsp black pepper (to taste)
  • 1 tsp dried thyme
  • 2 bay leaves

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Season chuck roast with salt and pepper; brown in batches until all sides are golden.
  2. Remove meat and sauté onions and garlic until onions are translucent.
  3. Return beef to pot; add carrots and potatoes. Pour in beef broth and optional red wine while scraping up browned bits.
  4. Stir in thyme and bay leaves; season as desired. Bring to a gentle boil then reduce heat. Cover and simmer for about 2 hours until tender.
  5. Remove bay leaves before serving; thicken with a cornstarch slurry if desired.
