- 3–4 boneless, skinless chicken breasts
- 1 cup long grain rice
- 2 cups shredded cheese (1 cup cheddar and 1 cup mozzarella)
- 1 can (10.5 oz) cream of chicken soup
- 1 cup chicken broth
- 1 cup frozen mixed vegetables (peas & carrots)
- 1 tsp onion powder
- 1 tsp garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C). Lightly spray a 9×13 baking dish with nonstick cooking spray.
- Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Optionally, sear in a pan until golden brown.
- In a large mixing bowl, combine uncooked rice, shredded cheese, cream of chicken soup, chicken broth, and frozen vegetables. Mix until well-coated.
- Pour half the mixture into the baking dish, place seasoned chicken on top, and cover with remaining mixture.
- Cover with aluminum foil and bake for about 45 minutes. Remove foil in the last 10 minutes to allow cheese to bubble.
- Let sit for 5 minutes before serving.
