  • 34 boneless, skinless chicken breasts (1.5 lbs)
  • 2 medium zucchinis, chopped
  • 1 cup long-grain rice (uncooked)
  • 2 cups shredded mozzarella and cheddar cheese
  • 2 cups low-sodium chicken broth
  • 1 cup heavy cream
  • 1 tsp garlic powder
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, add olive oil and sauté cubed chicken until golden brown, about 5-7 minutes. Season with salt and pepper.
  3. Add chopped zucchini, garlic powder, and Italian seasoning; sauté until zucchini softens (about 3-4 minutes).
  4. In a large bowl, mix cooked chicken mixture with uncooked rice, heavy cream, chicken broth, and half of the cheese.
  5. Pour the mixture into the prepared baking dish, top with remaining cheese, cover with foil, and bake for 25 minutes.
  6. Remove the foil and bake for an additional 15-20 minutes until bubbly and golden brown. Let rest for 10 minutes before serving.
