- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 1 can black beans (15 oz), rinsed
- 1 cup fresh salsa
- 2 cups shredded cheese (cheddar and Monterey Jack mix)
- 2 cups tortilla chips, crushed
- 1 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic powder
- Fresh cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C) and grease a large baking dish.
- Season chicken breasts with salt and pepper. Cook in a skillet over medium heat until golden brown, about 5-7 minutes per side. Let rest before shredding.
- In a bowl, combine shredded chicken, black beans, salsa, chili powder, cumin, and garlic powder.
- Layer half of the tortilla chips in the baking dish. Spread half of the chicken mixture on top and sprinkle with one cup of cheese. Repeat layers and top with remaining cheese.
- Cover with foil and bake for 20 minutes, then remove foil and bake for an additional 10-15 minutes until cheese is bubbly and golden brown.
