  • 34 boneless, skinless chicken breasts (about 1 lb)
  • 8 oz wide egg noodles
  • 1 can (10.5 oz) cream of chicken soup
  • 2 cups mixed frozen vegetables (peas and carrots)
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • ½ cup breadcrumbs (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Boil the egg noodles according to package instructions until al dente; drain well.
  3. In a skillet over medium heat, sauté diced chicken until golden brown and cooked through (about 7-10 minutes).
  4. In a large bowl, mix together cooked noodles, sautéed chicken, cream of chicken soup, mixed veggies, onion powder, garlic powder, salt, and pepper until well combined.
  5. Fold in half of the shredded cheese before transferring the mixture into a greased baking dish. Reserve some cheese for topping.
  6. Sprinkle remaining cheese and breadcrumbs on top. Bake for 30-35 minutes until bubbly and golden brown.
