  • 1 can (15 oz) pure pumpkin puree
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) kidney beans, rinsed and drained
  • 2 cups fire-roasted diced tomatoes
  • 1 large yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 cup diced bell peppers (red or yellow)
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 4 cups low-sodium vegetable broth
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and bell peppers; sauté until softened.
  2. Stir in minced garlic; cook until fragrant.
  3. Sprinkle in chili powder and cumin, stirring to coat the vegetables.
  4. Add diced tomatoes with juices, followed by pumpkin puree; mix well.
  5. Fold in black beans and kidney beans.
  6. Pour in vegetable broth until desired consistency is achieved. Simmer for at least 30 minutes.
