  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup bell peppers (red or green), chopped
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 2 cups low-sodium chicken broth
  • 2 tbsp olive oil
  • Optional: sour cream or Greek yogurt for topping

Instructions

  1. In a large pot over medium heat, add olive oil and sauté diced onions until translucent (about 5 minutes). Add minced garlic and chopped bell peppers; cook until fragrant.
  2. Crumble in the ground turkey and cook until browned, breaking apart as it cooks.
  3. Stir in chili powder and cumin; coat the turkey evenly.
  4. Add canned tomatoes (with juices) and rinsed beans; mix well.
