  • 12 oz cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil leaves, chopped
  • 1/2 cup feta cheese, crumbled
  • 3 tbsp extra-virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini in a large pot of salted boiling water until al dente (about 3–5 minutes). Drain and rinse under cold water.
  2. In a large mixing bowl, combine cherry tomatoes, cucumber, red onion, and basil.
  3. In a small bowl or jar, whisk together olive oil, lemon juice, salt, and pepper.
  4. Add the cooled tortellini to the vegetable mixture. Drizzle with dressing and gently toss until evenly coated.
