  • 1 can (15 oz) low-sodium chickpeas, drained and rinsed
  • 1 cup kimchi, chopped (spicy or mild)
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 3 green onions, sliced
  • 1/4 cup fresh cilantro, chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp sesame oil
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. Rinse and drain the chickpeas thoroughly.
  2. Chop the red bell pepper, cucumber, green onions, and cilantro into bite-sized pieces.
  3. In a small bowl, whisk together olive oil, lime juice, sesame oil, honey or maple syrup, salt, and pepper until emulsified.
  4. In a large bowl, combine chickpeas with chopped vegetables and kimchi; pour dressing over the top and toss gently.
  5. Taste and adjust seasoning as needed.
  6. Chill in the refrigerator for at least 30 minutes before serving.
