  • 4 cups low-sodium vegetable broth
  • 1 cup diced carrots
  • 1 cup diced celery
  • 2 cups fresh spinach or kale
  • 3 cloves garlic, minced
  • 1 medium onion, chopped
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté chopped onion and minced garlic until fragrant.
  2. Add diced carrots and celery with dried thyme and oregano; cook until softened.
