  • 1 cup granulated sugar

  • 1/2 cup freshly squeezed lemon juice

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a mixing bowl, cream butter and sugar until light and fluffy, about 3 minutes.
  3. Beat in eggs one at a time, then stir in lemon zest and juice.
  4. In another bowl, whisk flour and baking powder. Gradually add to wet ingredients alternating with milk until smooth.
  5. Pour batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean.
  6. For the lemon curd, whisk egg yolks, sugar, lemon juice, and zest in a saucepan over medium heat until thickened (about 10 minutes).
  7. Once cakes are cool, layer with half of the lemon curd between them and spread remaining curd on top.
