  • 2 cups vegetable broth (low-sodium)
  • 2 medium fresh lemons (juiced and zested)

  • ¼ cup fresh parsley (chopped)
  • Salt and pepper to taste

Instructions

  1. In a medium saucepan, heat vegetable broth over medium heat until gently simmering.
  2. In another pan, heat olive oil over medium heat and sauté minced garlic until fragrant (about 1-2 minutes).
  3. Stir in the orzo pasta and pour in the warm vegetable broth; mix well.
  4. Simmer for 10-12 minutes until the orzo is al dente and has absorbed most of the liquid, stirring occasionally.
  5. Remove from heat and stir in lemon juice and zest.
  6. Fold in chopped parsley, salt, and pepper; serve warm.
