Last summer, I decided to try my hand at these Bang Bang Chicken Skewers during a family gathering. Everyone was a bit skeptical, but once the air fryer started working its magic and that sweet-spicy aroma filled the air, I knew I was onto something. David couldn’t stop raving about them, and I ended up making a second batch.

Brushing the chicken with the bang bang sauce while air frying adds layers of flavor and creates a sticky-sweet crust. That caramelization happens when the sugars in the sauce react with the heat, giving you a charred flavor that keeps the chicken juicy.
Ingredients in Bang Bang Chicken Skewers
Let’s break down the key players in these Bang Bang Chicken Skewers. Each ingredient brings something special to the table.
- Chicken Thighs: These provide juicy, tender meat that holds up well on the skewers and absorbs all those flavors.
- Extra Virgin Olive Oil: This adds richness and helps the spices adhere to the chicken.
- Paprika: This brings a mild sweetness and color to the dish.
- Garlic Powder: This contributes a subtle, savory depth that complements the other flavors.
- Black Pepper: This adds a warm kick that balances the sweetness of the sauces.
- Cayenne Pepper: This packs a punch, giving the skewers a nice heat that builds as you eat.
- Salt: This enhances all the flavors, making each bite more satisfying.
- Hot Honey: This sticky-sweet drizzle adds a touch of heat and balances the richness of the mayonnaise.
- Mayonnaise: This creates a creamy base for the sauce, marrying all the flavors together.
- Lime Juice: Fresh lime juice cuts through the richness, bringing brightness to the sauce and chicken.
- Thai Sweet Chili Sauce: This adds sweetness and a bit of spice that ties all the flavors together.
- Sriracha: This gives an extra layer of heat and tanginess, allowing you to customize the spice level.

How to Make Bang Bang Chicken Skewers
You can whip up these Bang Bang Chicken Skewers in about 35 minutes. That’s a quick turnaround for a dish that’ll please the crowd.
Prep Chicken: In a large bowl, combine chicken thighs, olive oil, and all the spices. Toss well to coat. You want the chicken evenly coated in a flavorful layer.
Skewer Chicken: Thread the chicken chunks onto skewers, leaving a bit of space between each piece. Aim for about ½ to ¾ of the skewer filled. It should look packed but not cramped.

Mix Sauce: In another bowl, whisk together mayonnaise, Thai sweet chili sauce, Sriracha, and fresh lime juice. This will create a smooth, creamy sauce.
Prep for Cooking: Pour half of the sauce into a separate bowl for later. Brush the remaining sauce over the skewers, making sure to get in between the pieces. It should look glossy and well-coated.
Cook Chicken: Cook the skewers in an air fryer for about 15-20 minutes, turning often. You’re looking for an internal temperature of 165°F, and the chicken should have a nice char. You’ll hear a gentle sizzle as they cook.

Finish with Sauce: Once done, drizzle or brush the reserved sauce over the skewers. Serve immediately, and your kitchen will be filled with that sticky-sweet aroma.
Keeping Leftovers Fresh
Store any leftover Bang Bang Chicken Skewers in an airtight container in the fridge for up to 3 days. If you want to keep them longer, you can freeze them for up to 3 months. Just be sure to let them cool completely before sealing to avoid moisture buildup that could ruin the texture.
When you’re ready to enjoy the leftovers, reheat them in the air fryer at 350°F for about 5-7 minutes. This way, they’ll stay crispy without drying out. You can also drizzle a bit of the reserved bang bang sauce while reheating for extra flavor.
Perfect Pairings for Bang Bang Chicken Skewers
