Let’s Make Some Golden Chicken and Lentil Soup!

This Golden Chicken and Lentil Soup takes about 65 minutes from start to finish and enhances the cozy magic of your kitchen. With every step, you’ll feel home cooking wrapping around you, just as the rich aromas fill the air.

  1. Caramelize Onions:
Heat 3 tablespoons of olive oil in a large pot over medium heat. Add 2 cups of thinly sliced yellow onions. Stir frequently for 16-20 minutes until they turn a deep golden brown. If needed, add another tablespoon of oil to ensure the onions are well-coated. Remove about ¼ of the caramelized onions to a paper towel-lined plate for garnishing later.
  1. Bloom Spices:
Add 10 cloves of pressed garlic to the pot and cook for an additional 30-60 seconds, letting the garlic perfume the air. Then, sprinkle in 1 teaspoon of ground turmeric, 1 teaspoon of seven spice, ½ teaspoon of ground coriander, ¼ teaspoon of cayenne pepper, 1 teaspoon of kosher salt, and ½ teaspoon of black pepper. Stir these ingredients together, allowing the spices to bloom.

  1. Simmer Chicken:
Pour in 8 cups of low-sodium chicken stock and bring the mixture to a boil. Once it’s bubbling, add 1 pound of boneless, skinless chicken breasts or thighs. Lower the heat to low, cover with a lid, and cook for 18-20 minutes until the chicken reaches an internal temperature of at least 165ºF. The simmering broth creates an inviting sound, promising a heartwarming meal.
  2. Shred Chicken:
Carefully remove the cooked chicken from the pot and place it on a plate. Let it cool slightly, then use two forks to shred it into bite-sized pieces.
  3. Cook Lentils:
Bring the soup pot back to a simmer, then add 1 ¼ cups of rinsed red lentils. Spoon away and discard any white foam that rises to the top. Cover the pot and lower the heat to medium-low, cooking for 15-20 minutes until the lentils are tender. The soup thickens, and a lovely, earthy aroma envelops you.
  4. Finish Soup:
Stir in your choice of chopped herbs—spinach, parsley, cilantro, dill, or mint—along with the shredded chicken. Adjust the consistency by adding a splash of broth if necessary. Taste and add more kosher salt if desired. Mix in 2 tablespoons of lemon juice now or at the table for brightness.
  5. Serve:
Ladle the soup into bowls and garnish with the reserved caramelized onions. Serve warm with crusty no-knead bread, perfect for soaking up all that goodness.

Now, you’re ready to create a comforting masterpiece in your kitchen! Enjoy every spoonful.

Creative Spins on Golden Chicken and Lentil Soup

Cooking is all about expression, and I love exploring variations that can turn a good dish into something personal. Here are a few spins you can take with this comforting soup:

  • Oil Choices: Switch out the olive oil for avocado oil if you want a high-heat option. It’ll add a unique richness without overwhelming the flavors.
  • Fresh vs. Powdered Garlic: Always use fresh garlic cloves instead of garlic powder if you want to amp up that aromatic punch. Fresh garlic adds a flavor that can take this soup to the next level.
  • Spice Swap: If seven spice isn’t in your spice rack, feel free to use cumin and garam masala instead. They bring their own depth and warmth, adding a delightful twist.
  • Protein Preference: While I enjoy using chicken breast, swapping it out for thighs or tenders can give the soup a different texture and richer flavor. Just be mindful of adjusting the cooking times; thighs may need a bit longer.

Experiment and make this soup your own; it’s all about what flavors and ingredients sing to you!

Keeping the Magic Alive

Storing your Golden Chicken and Lentil Soup is easy! Just let it cool completely before transferring it to an airtight container. You can keep it in the fridge for up to three days, but if you want to save some for later, it freezes beautifully! Remember to seal it tightly and enjoy within three months for the best flavor.

When it’s time to enjoy that cozy goodness again, I recommend reheating it gently on the stovetop over low heat. Stir it occasionally and feel free to add a splash of broth or water to keep it from drying out. You want every spoonful to be just as enjoyable as the first time! Grab your favorite crusty bread, and you’re all set for another comforting meal.

Perfect Pairings for Your Golden Chicken and Lentil Soup

As the welcoming aroma of your Golden Chicken and Lentil Soup fills the air, you’ll want to enhance the experience with a few thoughtfully chosen sides. Together, they’ll transform your soup into a delightful meal that warms both body and soul.

  • Crusty No-Knead Bread: This is the ultimate companion to your soup! Its hearty, chewy texture is perfect for dipping, soaking up the rich notes from the broth.
  • Simple Green Salad: A light salad with mixed greens, cucumbers, and a zesty vinaigrette adds a refreshing contrast. The crunch and acidity will balance the richness of the soup.
  • Roasted Lemon-Herb Vegetables: Roasted veggies tossed in olive oil and herbs add a caramelized sweetness and a burst of flavors. They contrast beautifully with the textures in your soup and complement the dish.

Garnish Your Bowl

  • Caramelized Onions: Return those golden, sweet onions you set aside earlier to the soup for an extra layer of flavor. Their warmth and sweetness enhance the dish.
  • Fresh Herbs: A sprinkle of freshly chopped herbs like cilantro or parsley brightens the presentation and adds fresh flavor that lifts every spoonful.
  • Lemon Wedges: Squeezing a bit of lemon juice right before eating introduces a bright finish that contrasts with the savory warmth of your soup.

I can’t help but imagine how your kitchen will fill with love and joy as you share this meal. What’s your favorite way to make a warm dish feel cozier?

Notes

The secret to the rich flavor of this soup lies in the caramelization of the onions. This technique not only brings out their natural sweetness but also creates a complex depth of flavor that serves as the foundation for the entire dish. The slow cooking process allows the sugars in the onions to brown, enhancing the overall taste profile and creating a comforting base for the spices and chicken.
