  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • Juice of 1 lemon (about 2 tablespoons)
  • 1 cup low-sodium chicken broth
  • 1 tablespoon honey
  • 1 teaspoon smoked paprika

Instructions

  1. Gather and chop all ingredients: bell peppers into bite-sized pieces, onion thinly sliced, and garlic minced.
  2. Heat olive oil in a large skillet over medium-high heat. Sprinkle Cajun seasoning on both sides of the chicken breasts and cook for 6–7 minutes per side until golden and cooked through. Remove from skillet.
  3. In the same skillet, add sliced onions and bell peppers; sauté for about 5 minutes until softened.
  4. Add minced garlic to the vegetables; cook for an additional minute until fragrant.
  5. Pour in chicken broth and honey; scrape any bits off the pan for extra flavor.
  6. Return the chicken to the skillet, simmer in the sauce on low heat for another 5 minutes. Squeeze fresh lemon juice over everything before serving.
