Ingredients

  • 2 slices sourdough bread
  • 1 cup fresh mozzarella cheese, sliced
  • 1/4 cup oil-packed sun-dried tomatoes, chopped
  • 1/4 cup fresh basil leaves
  • 2 tsp high-quality olive oil

Instructions

  1. Slice the sourdough bread into thick pieces (about 1 inch).
  2. On one slice of bread, layer half of the mozzarella, followed by sun-dried tomatoes and basil leaves. Top with the remaining mozzarella.
  3. Drizzle olive oil over both sides of the sandwich.
  4. Heat a non-stick skillet over medium heat and grill the sandwich for about 3-4 minutes until golden brown.
  5. Carefully flip and grill the other side for another 3-4 minutes until crisp and cheese is melted.
  6. Remove from heat and let cool for a minute before slicing in half to serve.
